This watermelon salad with feta and cucumber is my new fave. You will love it too!



I was unfamiliar with this salad until my cousin posted a picture of it on Instagram.


And since it has all the things I love, I promptly started searching for recipes online and found this one on Dinner at the Zoo.

It’s fresh, crisp and delicious and will no doubt become a summer staple in our home.


This particular recipe calls for mint, but we didn’t like it and I will leave it out next time.


Also, this salad is best served on the day you make it.

WHAT’S IN IT


3 cups watermelon, cubed or balled


1 1/2 cups sliced cucumber, seeds removed


2 tbsp. mint, thinly sliced (optional)


1/3 cup feta cheese


3 tbsp. olive oil


1 tbsp lime juice


salt and pepper to taste

HOW TO MAKE IT


Place watermelon, cucumber and mint in large bowl.


In separate bowl, whisk olive oil, lime juice and salt and pepper.


Drizzle the dressing over the melon mixture and toss to coat.


Sprinkle with feta and serve.
