This Caesar salad has a few delicious surprises. Think broccoli, sun-dried tomato and capers.

Light and refreshing is the best way to describe this Caesar salad featuring a few delicious surprises like broccoli, capers and sun-dried tomatoes.


The chicken rounds out the recipe with just enough protein to make it a full, healthy meal you will love.


This recipe makes one serving.

WHAT’S IN IT


1 ¼ cup of broccoli florets


¼ cup of sun-dried tomatoes


6 oz. of shredded chicken

2 tbsp. light Caesar dressing


½ tsp pepper


1 tbsp. capers


2 tbsp. parmesan cheese

I personally steam the broccoli florets to be “al dente” versus raw because I prefer that (and the color becomes more vibrant).


If your sun-dried tomatoes are in oil, rinse and chop them and combine all ingredients.


Refrigerate for a bit and enjoy!
