Savory roasted cabbage with meat sauce makes the perfect mid-week meal.
This savory dish will bring vibrant color, healthy nutrients and big taste to your family's dinner table.
I love using a purple cabbage, but any will do.

Cabbage Flowers:
1 ½ cups purple cabbage
1/2 tsp. garlic powder
1/2 tsp. paprika
1/8 tsp. salt
1/4 tsp. pepper
Meat Sauce:
15 ounces cooked ground beef
1 tsp. tomato paste
1 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp cinnamon (optional)
1/8 tsp. salt
1/4 tsp. pepper
1 cup low-carb marinara sauce
1 cup diced tomatoes
Chopped fresh parsley for garnish
HOW TO MAKE IT
Preheat oven to 400 degrees and line baking sheet with parchment paper.
Slice cabbage into 1-inch-thick rounds and place three of them on the baking sheet in a single layer (reserve any leftover cabbage for another use).
Brush the tops with olive oil and sprinkle with garlic powder, paprika, salt and pepper.
Roast until the cabbage is tender and edges are golden, 40 to 45 minutes.
While the cabbage is roasting, sauté the ground meat and drain excess grease.
Add tomato paste and spices and stir for one minute over medium heat to bring out the flavors.
Add tomato sauce and diced tomatoes, stir to combine then lower the heat to medium-low and simmer for 15-20 minutes until the sauce is thick.
To serve, place a roasted cabbage flower on each plate and top with a 1/3 of the meat sauce. Sprinkle with parsley for garnish if desired and serve.
