Everyone loves a great pizza, but most of us could do without the carbs and calories.


This recipe for healthy pizza bites solves that problem without sacrificing taste.

WHAT’S IN IT


2 1/2 cups riced cauliflower


2 eggs


1 cup reduced-fat shredded mozzarella, divided


3 Tbsp. grated parmesan

ree

1/2 tsp Italian seasoning


1/8 tsp salt


1/4 cup homemade tomato sauce


Cooking spray


1.6 oz turkey pepperoni slices, chopped

HOW TO MAKE IT


Preheat oven to 400 degrees.


There is no need to pre-cook the cauliflower; blend it in the blender to make it finer, then add eggs, 1/4 mozzarella, parmesan, Italian seasoning and salt to the cauliflower.

Divide mixture evenly among 12 slots of a lightly greased standard-sized muffin pan. Press down lightly to form mini crusts. Bake for 20 minutes.


Top each mini cauliflower crust with tomato sauce, remaining cheese, pepperoni.


Bake until cheese is melted, about 5 to 7 minutes.


Makes 2 servings.
