Get a taste of Korean with these healthy and delicious Bibimbap bowls.

For those of you who love your meals in a bowl, this recipe is for you.


Bibimbap is a Korean dish and it’s the mother of all bowls.


It’s simple, easy and oh so healthy!

WHAT’S IN IT


1 tsp olive oil


5 cups (150g) spinach


1 tsp sesame oil


¼ tsp salt


1 pound of lean ground beef (97% lean)


2 tbsp chili garlic sauce


1 tbsp reduced sodium soy sauce


½ medium head of cauliflower or 2 cups riced


1 cup thinly sliced cucumber


4 eggs hard boiled or over easy


½ cup chopped spring or green onion


1 tbsp sesame seeds

HOW TO MAKE IT


Heat olive oil in a skillet over medium-high heat; add spinach and cook until just wilted.


Drizzle sesame oil over the top and lightly season with salt. Remove spinach from skillet and set aside.


Cook ground beef until fully browned; stir in chili garlic sauce and soy sauce, cook for 1 minute and then remove from heat.


Prepare riced cauliflower.

Build bowls by adding a ½ cup riced cauliflower to each bowl, then arrange a quarter of each on top: Spinach, ground beef and cucumber.


Add an egg to each bowl and garnish with spring onions and sesame seeds.
